Greens and Blackeyed Peas

 

 

 

 

Brenda likes to have more than one knife, in case

she loses one.  This is her favorite knife shape.

They take an edge.  The handle is wood, I think.

Not some kind of a composite.  The blades are

carbon steel.  Not stainless.  The rivets are brass.

That’s about it.  Nothing beats a green but a green.

Collards, mustards, turnips.  Kale, kohlrabi, beet tops.

Maybe some blackeyed peas and Aunt Claribel’s spoon bread.

Which has yard eggs in it, and is like a soufflé.

An oyster knife, say an S-137, can have

a plastic handle.  Don’t jab it in your hand,

Kyle.  You have to play the Five Spot in Atlanta.
